Did you add/create a domain under the "Domains" node? Also check within the mailbox properties under the "Addresses " that a mapped email address exists for the mailbox

DKIM checks the mail from address (envelope sender address) to get the DKIM record from DNS. The header example reports X-Envelope-Sender: notify@domain2 *correct* and therefore the DKIM signature needs to be domain2.

No there is no variable that returns the IP address in the bounce. You could try and use [ME_REMOTE_HOST] variable instead.

Did you restart the server after the installation of MailEnable? The error usually indicates that the environment variable path for the MailEnable BIN and BIN64 folders is not set or taken effect. Therefore if you haven't already done so restart the server and try again.
