The mailbox character setting will override the Administration console setting. What email client are you using when message are received? You need to set the client encoding to display denmark characterset.

There is a General character setting for webmail in the Mailenable administration program. Navigate to Servers>localhost>Services>Webmail and right click on webmail. Click properties and in the properties window under General you will be able to chnage the character setting.
